Comfy Casserole

Ingredients:

1 cup chopped cooked broccoli
1/2 cup diced cooked carrot
6 ounces chopped cooked smoked sausage
2 1/2 cups prepared macaroni and cheese
1 cup shredded colby-monterey jack cheese, divided
1/2-3/4 cup milk
1 teaspoon garlic powder
1/2-3/4 teaspoon ground black pepper

Directions:

Preheat oven to 350 degrees.
Spray a 2 quart casserole dish with cooking spray.
In a large bowl mix together broccoli,carrots and smoked sausage.
Then add macaroni and cheese and 4 ounces of colby monterey jack cheese blend,and enough milk to blend all ingredients well.
Then add the garlic powder and black pepper,mixing well.
At this point, taste and adjust your seasonings if desired.
Pour mixture into sprayed dish, and sprinkle remaining co/jack cheese over the top.
Bake at 350 degrees for 35 minutes or until golden brown, and Enjoy!

TWO-MINUTE MICROWAVE FUDGE

Ingredients:

1 lb powdered sugar
2/3 cup cocoa
1/4 teaspoon salt
1/4 cup milk
2 teaspoons vanilla
1/2 cup butter or 1/2 cup margarine
1/2 cup chopped nuts (optional)

Directions:

Sift powdered sugar, cocoa, and salt into a 1 quart microwave safe bowl.
Stir in milk and vanilla.
Mix well.
Place butter on top.
Microwave on high, 2 minutes.
Beat with wooden spoon until smooth.
Stir in nuts (OPTIONAL).
Spread in 8 X 8 X 2 inch baking pan.
Chill about 1 hour or until firm.
Cut into pieces!

HOMEMADE PIMENTO CHEESE

2 Cups of Sharp Cheddar
8 oz. of softened Cream Cheese
1/2 Cup of Mayo
1/4 Teaspoon Garlic Powder
1/4 Teaspoon of Onion Powder
1 Jalapeno Pepper, seeded and minced (more or less to taste)
1 (4 oz.) Jar of Pimento, drained
Salt & Black Pepper (to taste)


Instructions:

Put all the ingredients in a bowl together and mix on medium speed with a mixer until mixed together well. 


Tips:

I like to mix everything together without the shredded cheese and then add the cheese shred and mix again. 
You can eat it right away or store it covered in the fridge for sandwiches or dip over the next couple of days.
Toast a couple of slices of bread and make a warm toasted pimento cheese sandwich to go along with soup for dinner!


Holy Cow Cake

Chocolate Cake Mix (your preference), baked as directed
1-14 oz. can of sweetened condensed milk
8 oz. jar of caramel topping
4-5 Butterfingers candy bars, crushed
1-8 oz. cream cheese, softened
12 oz. Cool Whip

Prepare and bake cake as directed on package.

Meanwhile, blend caramel and sweetened condensed milk.

After removing cake from oven, use a skewer or fork to poke holes into the top of the cake.

Pour caramel mixture over cake.

Crush candy bars and sprinkle half of them over the warm cake. Chill.

Stir cream cheese and Cool Whip together until blended well. Spread over cooled cake.

Sprinkle with remaining candy.


Homemade King Hawaiian Rolls & Loaf

Ingredients:

6 cups all-purpose flour, plus an additional 1/2 cup flour, divided 
3 eggs 
2 cups pineapple juice, room temperature 
3/4 cup sugar 
1 teaspoon vanilla 
2 (1/4 ounce) envelopes yeast 
1/2 cup (8 tablespoons) butter, melted

Instructions:

1-In a small bowl, beat your 3 eggs. Add the 2 cups pineapple juice, sugar, vanilla, and melted butter. 

2-Measure 3 cups of the flour into a large bowl. Stir in your egg mixture until well-combined. Sprinkle in the yeast packets, one at a time, mixing well. 

3-Add the remaining 3 cups of flour and mix well. If it becomes to difficult to stir with a wooden spoon, just use your hands! Make sure all of the flour is well incorporated—the dough should be tacky to the touch but not overly sticky. If it appears too wet, sprinkle in a bit of extra flour, just a tablespoon or so at a time. Cover your bowl with a clean kitchen towel and set it in a warm place to rise for 1 hour. 

4-Remove your dough from the bowl and knead in an additional ½ cup of flour. I kneaded mine 10 to 15 times, making sure the flour was well incorporated. Form the dough into rolls, and/or loaf. Place in buttered pans. Cover and place in warm place to rise for an additional hour, or until the dough doubles in size. 

Bake at 350 degrees for 25 to 30 minutes, or until golden brown. Brush tops with melted butter, and serve warm!

Old Fashioned Custard Pie

1 unbaked pie shell (I use Marie Callendar's deep dish)
3 large eggs
1/2 cup of sugar

1/2 teaspoon of salt
1/2 teaspoon of nutmeg
2-2/3 cups of milk
1 teaspoon pure vanilla extract

Pre-heat the oven to 350 degrees. Beat your eggs slightly, then add sugar, salt, nutmeg, and milk. Beat well and poor into the unbaked pie shell. Bake for 35 to 40 minutes. Remove from oven and cool. Sprinkle the top of pie with fresh ground nutmeg and serve. southern momma!

MAMA'S CREAMY BAKED MACARONI AND CHEESE

16 ounces elbow macaroni (about 3 cups)
3 tablespoons butter or margarine
1 ½ cups milk, divided
2 large eggs, lightly beaten
1 lb (16-ounces) cubed (1/2 inch size) Velveeta cheese
8 ounce shredded Kraft Mild Cheddar Cheese (about 2 cups), divided
8 ounce shredded Kraft Monterrey Jack Cheese
1 teaspoon salt
1 teaspoon freshly ground black pepper

Heat oven to 375 degrees F.
1. Cook macaroni in a large pot of salted boiling water until tender but not mushy, about 8-10 minutes. Drain well and pour into a large mixing bowl.

2. Melt on low the Velvetta Cheese and ¾ cup milk until melted (stir often)

3. Pour Melted Cheese Sauce over Pasta and Stir. Add in butter, ¾ cups milk, eggs, 1 cup shredded cheeses, salt and pepper. Mix well and transfer to a 2 quart baking dish. Pour the remaining cheese on top.

Bake until top crust is golden brown and casserole is bubbling, about 25 minutes. Serve hot!
